Berry Chia Muffins

Perfect for breakfast or a snack these muffins are packed with nutritious ingredients and will hit the spot.




 

Ingredients

2.5 cups wholemeal flour

3/4 cup sugar

1/2 cup Extra Virgin Olive Oil

3/4 cup milk

1 teaspoon vanilla essence

1 egg

200g white chocoalte chips

1 tablespoon chia

1 cup frozen berries

 

Methods

1) Pre-heat oven to 160degree's Celsius and line a muffin tray with cases.

2) Place flour and sugar in a mixing bowl. Create a well in the centre.

3) Add wet ingredients and mix until combined. If the mixture appears too thick, you can add in a little more oil or milk.

4) Mix in chia seeds and chocolate chips. Then mix in berries.

5) Place around 2 tablespoons of mixture into each muffin tray.

 

TIP: You can use any berries you like in these muffins to change up the flavour.
